Keep Your Freezer Stocked with Single Servings for Emergencies


I've been distracted this last week with an illness in our family. My normal routine is disrupted, and frankly, meal planning, shopping, and cooking have been the last things on my mind. But that doesn't mean that I haven't been hungry, just that I don't want to plan anything, and I really don't want to put the effort into cooking anything, either, not even the effort it takes to cut up greens for a fresh salad.

This week, I was grateful that I had a well-stocked freezer.


I had soups frozen in single servings, frozen brown rice packets from Trader Joe's, frozen vegetables, and frozen fruits. At the end of a long day, I could just whip out one of those rice packets and a soup or veggies, heat them up in the microwave, and have a hearty meal. In the morning, I could add some frozen fruit to almond milk, put that together in my blender, and have a bit of a breakfast smoothie.

One day I did take the time to stop at my favorite local farmer's market to get some nectarines, plums, and peaches, all locally grown--easy, handy snacks to round out the stuff in the freezer.

Never underestimate the power of a well-stocked freezer when times get challenging and you are cooking for yourself, needing a quick, healthy meal when you have no interest in cooking. It sure beats takeout or fast food!
