Quick and Easy Dinner for One - Tortilla Pizza

There are times, like at the end of a particularly long and stressful workday, when I just don't want any part of  preparing a meal, even if I did plan well and have all the ingredients I need on hand. I just don't want to be in the kitchen and I certainly don't want to think about washing pots and pans and dishes before I call it a night. On days like this, all I want to do is drive over to the nearest fast food window, pick up a bag of comfort food and stuff myself while I sit on the couch and watch TV. It's almost always only with a supreme effort of will that I do drive right past the drive-through window and head for home -- unless I know I have ingredients for a hot, fresh tortilla pizza.


The other day I came across a recipe for a single-serving tortilla pizza that I thought was just fantastic. It's inexpensive to make, lower in carbohydrates than the traditional dough pizza, beautiful to look at, and absolutely delicious. It takes no time at all to put together and bake and it's so much better for you than any fast food meal. All you need are two small flour tortillas, prepared tomato sauce, some chopped fresh tomato and onion, mozzarella and feta cheeses, and an oven. Click here for the complete tortilla pizza recipe.

Three Tips for Making and Enjoying Your Single-sized Tortilla Pizza
  • Assemble your pizza ingredients in the morning or the night before for an even quicker meal at the end of a long day. Lay the ingredients out according to the recipe on a large sheet of non-stick aluminum foil. When you are done with the assembly, wrap tightly in the foil and refrigerate until you are ready to bake. Just before baking, brush a little extra tomato sauce on the edges.
  • Be creative with other ingredients. If you have leftover chopped bell peppers or mushrooms, add them, too. If you are a meat lover, add some pepperoni slices or leftover cooked ground beef. Use your imagination!
  • For a Mexican flare, use corn tortillas instead of flour and use prepared salsa instead of prepared tomato sauce.
I guarantee you, this quick and easy recipe will become a staple in your kitchen.

  1. I just found your blog and look forward to more posts. I struggle with cooking and planning menus for myself, but I know it is necessary because I piece and snack too much without proper meals.
